Failure

I had my first failure of my cupcake project. I made these a couple weeks ago, and let me tell you, the batter was so good. I was sad that they didn't work out. August's cupcake was going to be pineapple, half with lime cream cheese frosting, the other with chocolate cream cheese frosting. When I went to frost them I noticed they had cracked and pulled away from the wrappers. A taste test also revealed that they were not really edible. Ok, so you could eat them if you really wanted, but they were so thick you might as well be eating a sock. Or something else that is really thick. Maybe I will try these ones again. I figure that one failure out of how ever many other cupcakes I've made isn't bad.

Not bad at all. Boz just saw the pic and thought they were pie crusts :)... so you can just fill them and say they are gourmet mini pies :).

By the way, do you have all your cupcake recipes stored up somewhere? If not, can I vote to have them posted:)? I'd love to try them. They look and sounds sooo good! And I'm not even a cake fan. :)

Haha... they wouldn't have been very tasty. No I don't have the recipes stored up anywhere. I don't follow a recipe really. I started with a basic cupcake recipe I've changed a little and just kinda make it up as I go.

Nice! Ok then, I know who to ask for tips!!!- which btw, for your lemon cupcakes and frostings, do you use extract, juice, or zest? Or combo, I'm nervous the acid will do something funky.

I use juice in the cupcakes and zest in the frosting. Any time I try to use fruit in frosting it does funky things. Plus I don't want to thin it out. Zest works great and has a good flavor.
