Recent(er) Cupcakes

Ok, it's been awhile. So, in an attempt to get myself caught up, here are some of the cupcakes I've made in the last month or so as part of my little cupcake project:

Sometime in May, my parents and brother and sister came over for Sunday dinner and I made cupcakes for dessert. Or at least I think that's what happened. I'm thinking I made banana cupcakes with brown sugar instead of white sugar, and brown sugar cream cheese frosting. I can't remember if they had chocolate chips in them or not. I do remember liking them though.

My sister was nice enough to babysit for us earlier this month. I had bribed her with cupcakes, and let her choose what kind and she choose her favorite. So these ones once again are banana chocolate chip with chocolate cream cheese frosting. She was nice enough to share with us. I know she loved them, but I don't think there were bribery enough to get her to babysit again . :(

On Sunday we had our favorite friends, The Vans, come over for dinner. This cupcake was quite the experiment. So, my plan was for vanilla chocolate chip cupcakes with raspberry filling and chocolate cream cheese frosting, which is almost what I ended up with. The filling was too runny, so I tried to make it into a raspberry cream cheese frosting and then planned to fill the cupcakes with chocolate pudding. When I added my raspberry sauce to the frosting it was too thin and a funny texture. So, I put it in the fridge to see if it would thicken. What we ended up with was vanilla chocolate chip cupcakes with a raspberry cream cheese-ish filling (although I didn't get the cupcakes filled very well) and a chocolate pudding cream cheese frosting. Pretty tasty, but not quite what I was going for.

I have a cupcake in mind for next month that makes my mouth water just thinking about it....
